The standard for even is quite open to interpretation as the size, position and number of spots isn't stated clearly. If there aren't any even mice available to start a strain, you can use mice discarded from broken breeding due to their symmetrical markings. You should look for a full nose spot, even ears (both ears pigmented), shoulder spots and a central spot at the root of the tail. Breeding in a few more spots of patches would give the ideal pattern.
